Three generations of the Canino family have ladled the same Sunday gravy, rolled the same pasta, and pulled out the same chairs for the same regulars in Old Town Fort Collins. Pour the Chianti. Sit a while.

The Canino family

It started with a borrowed pot and a stubborn recipe.

1976. Clyde at the original stove, the night before the doors opened.

"You don't open a restaurant. You open your kitchen to the whole town and hope they keep coming back."

In the spring of 1976, Clyde Canino and his wife Rosa took over a narrow storefront on South College, hauled in a stove that was older than their marriage, and started cooking the food they grew up on: the Calabrian red-sauce cooking of Clyde's mother, unhurried and unbothered by trends.

Fifty years later, the gravy still simmers six hours. The meatballs are still rolled by hand every morning. And the people who came in as kids now bring their kids. Clyde's daughter Mariella runs the kitchen; his grandson Dominic works the floor and knows your order before you sit down.

Nothing here is engineered. It's just what a family cooks when they mean it.
